Last weekend was a big one for the sport – Euro 2012 kicked off and in true
Irish spirit the country has gone football mad which is great craic! (I won’t
mention the Croatia match!).
The French Open finals were also on at the weekend which, as a massive
tennis fan, I was glued to!
To go with all the sport watching, it was only fitting to snack on some really
tasty food like this chicken and chorizo sambo! I also made a yummy lamb
tikka masala which I will post soon x
2 chicken breasts
1/2 tbsp ground cumin
1/2 tbsp ground coriander
3/4 tbsp paprika
Roasted red peppers (in a jar)
handful of 5mm chorizo rounds
handful of rocket
a few thin slices of fresh buffalo mozzarella
1 heaped tbsp of mayonnaise
Butterfly the chicken breasts by cutting into them horizontally, making sure not to cut all
the way through. Open out the breasts and flatten with your fist to make butterflied chicken.
To make the cajun rub combine the cumin, coriander and paprika in a bowl. Drizzle some
olive oil over the butterflied chicken and then pour over the cajun rub. Massage the breasts
so they are well coated.
Heat a grill pan over a medium high heat (frying pan is fine also) and when hot place the
chicken breasts on the pan. Cook for 6 minutes each side, depending on the size of the breasts.
Meanwhile heat a small frying pan over a medium heat and when hot add the chorizo slices
(Do not put oil in the pan as the chorizo releases a lot of oil). Fry for a few minutes until the
chorizo releases its oil and starts to brown. Remove the chorizo with a splotted spoon, reserving
the chorizo oil.
Slice the roasted red peppers into thin strips.
Place the mayonnaise into a bowl and pour the reserved chorizo oil into the mayo to make a
lovely spicy mayonnaise.
When the chicken has finished cooking on one side, turn it over and place the mozzarella slices
on top of the breasts (they will start to melt nicely as the chicken continues cooking).
When the chicken is nearly cooked, get all your fillings ready to assemble the sandwich!
Toast the pittas until warmed. Cut them open and smear some of the spicy mayonnaise
in the inside. Place the chorizo inside and slide in the chicken with the melted mozzarella.
Stuff some roasted red pepper strips and some rocket leaves inside and that’s it! Ready
to tuck in….YUM!
